Luckily, the kids are staying with their nonna (grandma) for a few days so my hubby and I can enjoy our meals little spiced up. They don’t like shrimps and are scared when I flambe. Also when we’re eating something they don’t like, we have to make barricades on the table so they don’t see our food. Today, there was no fuss and mess, we enjoyed our lunch with the taste of sea mixed with Cognac.

  • 500 gr shrimps
  • 2 tbsp olive oil
  • 2 dcl white wine
  • 2 tbsp tomato puree
  • pinch of salt
  • little pepper
  • 50 ml Cognac
  • 2 garlic cloves
  • 1 tsp parsley
  • 1 tbsp fine bread crumbs

Wash shrimps and separate heads by pulling them out of tails.

Heat olive oil on medium heat and saute shrimps for about 3 minutes (until their flesh becomes white). Combine wine and tomato puree. Add it to the shrimps. Add salt and pepper and cook for 3 more minutes. Pour Cognac over shrimps and flambe. Be extra careful, you don’t want to burn your kitchen ;)

Add minced garlic and parsley and cook for about 5 minutes.

At the end add 1 tbsp of bread crumbs (it will thicken the sauce). Stir and cook for one more minute.

Serve with rice or bread.
