It’s time of carnival and donuts are traditional “must have” on the table.

These warm and soft buns are irresistible.



  •  4 egg yolks
  •  50 gr butter
  •  30 gr sugar
  •  1 vanilla sugar (10 gr)
  •  20 gr fresh yeast
  •  400 gr white flour
  •  half orange
  •  orange zest
  •  lemon zest
  •  1 tbsp rum
  •  1 liter vegetable oil
  •  strawberry jam

For yeast:

  •  1/2 tbsp sugar
  •  1/2 tbsp flour
  •  125 ml milk


– 10 gr butter


First melt the butter and let it cool for a while.

In a large cup put the yeast, sugar, flour and warm milk (body temperature).

Stir with a spoon and cover with saucer. Let it rise.

Mix together egg yolks, sugar and vanilla sugar.

Add the butter in the mixture.


Put the flour in the bowl.

Grate lemon and orange and put the zest in the flour.

Put the yeast and the egg yolks mixture in the flour.


Drain half of orange and pour the juice in the mixture.

Add rum and mix everything well with electric mixer with dough hook attached.

When the dough starts to pull away from the sides of the bowl and starts to stick to the hook, transfer it to the kitchen surface and knead it well for about 5 minutes.


Put the dough on a lightly floured surface and cover it with warm cloth (I suggest warming up the cloth in the microwave for 15 seconds on 1000 W) . Let it rise for hour and a half.

When the dough has doubled roll it out with the rolling pin to 5 mm.

Now make the circles in the dough with the glass.


Put one tsp of strawberry jam in the center of a dough circle and cover it with another piece of dough.


Press the edges of the dough firmly with your fingers.

Take smaller glass and press the dough again.


Cover again with warm cloth and let it rise for an hour.


Heat the oil (be careful with the temperature, if it’s too hot donuts will burn from the outside and remain raw inside. I prefer a little lower temperature and fry a bit longer. Of course that doesn’t mean that the oil I’m putting the donuts in is cold. Practice makes perfect :) )

Turn the donuts upside down. Melt the extra 10 gr of butter and coat the surface of donuts.

When the oil is ready put the donuts in with the upper side down.

Fry them for about 3 minutes on the each side.

Take them out and put them on the paper towel.

Sprinkle them with powder sugar and enjoy.

The other option for making donuts is to roll out dough about 1 cm thick and fry them without filling. That’ s how you’re going to prevent the donuts to possible break (separate) after frying.
