Another great recipe from my book Dalmatian Cookbook by Dika Marjanović Radica.

These cookies are very popular in this time of year and everybody loves them. There are plenty versions of this recipe, I tried this one for the first time and it’s definitely one of my favourites. Cookies are ready in no time, and  are very rich and flavorful. You can eat them right away, no need to wait for a few days to loosen up. They are crispy for a few days and then become nice chewy and soft. I love them both ways. Store them in airtight container and try to resist stealing a cookie every time you go to the kitchen :)

 

Ingredients:

 

  • 250 gr flour
  • 100 gr sugar
  • 150 gr minced walnuts
  • 120 gr soft butter
  • Pinch of salt
  • 1 tsp cinnamon
  • Lemon zest
  • 1 tbsp rum
  • 3 egg yolks
  • 2 tbsp honey plus extra for brushing

 

Sift flour and add all ingredients in.

Mix with hands and divide dough in two pieces.

Flat each piece with hand and cover with plastic foil. Chill in the fridge for an hour or in the freezer for half an hour.

Preheat oven to 180°C.

Roll the dough (not too thick) and using knife or cookie cutter make different shapes, depending how you like it.

Carefully transfer cookies onto the baking tray covered with parchment paper. Melt some extra honey and brush each cookie with it. Place a piece of walnut or almond in the middle and bake for about 10 minutes.

Jos jedan recept iz moje knjige Dalmatinska kuharica Dike Marjanović Radice. Mene je recept oduševio. Možda se razlikuje malo okusom i teksturom od klasičnih medenjaka koje sam do sada probala, ali ovi su za mene najbolji. Još kad u sredinu stavite polovicu oraha ili badema…njami! Ovim medenjacima nije potrebno neko vrijeme da omekšaju. Mogu se odmah jesti. Jako su hrskavi, a nakon par dana postanu ekstra mekani. Meni su savršeni u oba slučaja. Držite ih u limenoj kutiji i pokušajte se suzdržati  da ih ne uzmete svaki put kad uđete u kuhinju :)

 

Sastojci:

 

  • 250 gr brašna
  • 100 gr šećera
  • 150 gr samljevenih oraha
  • 120 gr omekšalog putra
  • Prstohvat soli
  • 1 žličica cimeta
  • Malo limunove korice
  • 1 žlica ruma
  • 3 žumanjka
  • 2 žlice meda plus ekstra za premazivanje keksića

 

Zamijesiti tijesto rukama i podijeliti na dva dijela. Svaki dio lagano spljoštiti rukama i omotati plastičnom folijom. Staviti u frižider na sat vremena ili u zamrzivač na pola sata.

Zagrijte pećnicu na 180° C.

Razvaljajte tijesto (ne predebelo) i režite nožem ili kalupima oblike po želji.

Rastopite malo meda i premažite površinu svakog keksa. Utisnite po želji u sredinu polovicu oraha ili badema i pecite oko 10 minuta.
