I wanted to make something light and easy, just for my hubby and me, something that’s not to heavy on these hot days. He loves apricots and is fan of anything that’s creamy, so after some thinking, the verdict was creamy panna cotta with apricots cooked in wine liquor. Never mind the summer and all, the scents were quite wintry in my kitchen…cinnamon, cloves and sweet scent of wine, all wrapped together, made an excellent winter fairytale in this hot summer time. Our personal escape from unbearable heat.

 

Ingredients:

 

  • 4 apricots
  • 250 ml wine liquor (Prošek, Croatian sweet desert wine)
  • 2 tbsp orange honey
  • pinch of cinnamon
  • pinch of cloves
  • 2 dcl heavy cream
  • 1 gelatin sheet
  • 1 tbsp powdered sugar
  • 1 tsp vanilla bean paste (or extract)

 

Put apricots in the boiling water for about 30-60 sec. Shock them in ice cold water for about the same amount of time. Peel and cut in small pieces.

 

Heat the wine with honey, cinnamon and cloves.

When the honey melts, put the apricot pieces in and cook for 5 minute. Take the fruit out and continue to cook syrup for about 10 more minutes on medium heat.

Pour the sauce over apricots and leave it to cool, then place it in the fridge.

 

Prepare molds by brushing them lightly with oil.

 

Soak the gelatin sheet for 10 minutes in cold water.

Heat heavy cream, vanilla and sugar until hot, but not boiling.

Remove from heat.

Squeeze the water out of gelatin and put it in hot heavy cream stirring until gelatin melts.

Pour the cream in prepared molds and let it cool overnight in fridge.

 

Next day, unmold the panna cotta, and serve with cooled apricots in wine liquor.

 

Htjela sam napraviti nešto lagano za mog dragog i mene, nešto što neće pasti preteško u ove vruće dane. On jako voli marelice i sve što je kremasto pa je nakon dobrog promišljanja odluka pala na panna cottu sa marelicama kuhanim u prošeku. Bez obzira na ljeto, moja kuhinja je bila preplavljena mirisima zime. Cimet, klinčić i slatki miris vina donijeli su pravu zimsku čaroliju. Naš mali bijeg od ove nesnosne vrućine.

 

Sastojci:

 

  • 4 marelice
  • 250 ml prošeka
  • 2 žlice meda od naranče
  • prstohvat cimeta i klinčića
  • 2 dcl vrhnja za šlag
  • 1 listić želatine
  • 1 žlica šećera u prahu
  • 1 žličica paste od vanilije (ili ekstrakta)

 

Ogulite marelice tako što ćete ih najprije staviti u kipuću vodu na 30-60 sekundi, a zatim u ledenu vodu na istu količinu vremena.

 

Zagrijte vino, med, cimet i klinčić, pa kad se med otopi dodajte marelice narezane na kockice.

Kuhajte 5 minuta. Izvadite marelice van, a vino nastavite prokuhavati na srednjoj temperaturi oko 10ak minuta. Kad se malo zgusnulo, prelijte preko marelica i ohladite. Stavite u frižider do serviranja.

Namočite listić želatine u hladnoj vodi oko 10 minuta.

Pripremite kalupe za panna cottu tako što ćete ih lagano nauljiti.

Zagrijte vrhnje sa šećerom i vanilijom da bude vruće ali da ne zakipi.

Maknite s vatre i dodajte ocjeđenu želatinu.

Mješajte da se želatina otopi.

Izlijte vrhnje u kalupe i stavite na hlađenje preko noći.

Prebacite kremu iz kalupa na tanjurić i prelijte umakom od vina i kuhanim marelicama.
