Supermarkets are full of delicious young potatoes, so I decided to share this simple potato recipe. Police (no to be confused with law enforcers) are originally served with pancetta but I added a bit of Gorgonzola for even richer taste. They turned out best ever.
- 8 small potatoes
- vegetable oil
- 3 pinches of salt
Preheat oven to 210C degrees.
Wash potatoes and rub their skin with little brush. Do not peel the skin. Cut each potato diagonally. Put the halves into the bowl and add 3 pinches of salt. Mix well with your hands and rub the salt into potatoes.
Put the halves (skin facing down) on the oven tray covered with parchment paper and bake for half an hour.
Cut pancetta into little pieces.
After half an hour take the potatoes out of the oven, put little piece of gorgonzola on top of each half together with four pieces of pancetta (adjust the amount to your liking).
Bake for 10 minutes.
