I tried making potato bread dough few years ago and i loved it. So I thought to make potato dough for pizza and it came out perfectly. From now on it’s the only recipe I will use. For topping I used  homemade Istrian sausage full of aromatic condiments and shallots on the homemade pizza sauce and cheese….mmmmm, I could really use a bite, even in these late hours.


For dough:

  • 150 gr potato
  • 350 gr flour
  • 1 tsp dry yeast
  • 1 ⅓ tsp salt
  • 2 tbsp olive oil
  • potato water

For pizza sauce:

  • Pelati-peeled tomatoes Mutti (400 gr)
  • 2 pinches salt
  • 2 tsp sugar
  • 1 tbsp dry oregano
  • 1 tbsp dry basil
  • 1 tsp dry onion

For topping:

  • homemade Istrian sausage
  • Tilsit cheese
  • shallots
  • lamb’s lettuce
  • olive oil


Peel and cut potatoes into little pieces. Put them in a pot, cover with water and bring to the boil.

Meanwhile sift flour in a bowl and add salt, dry yeast and olive oil. When potatoes are cooked (after 10-15 minutes) strain them and keep the water. Use potato ricer and squeeze potatoes directly in the bowl with flour.


Potato water will still be too hot so add little tap water until it’s lukewarm. Add water in flour mixture, little by little, kneading the dough until nice and smooth. Cover with kitchen towel and leave until it doubles in size (about 1,5 hour).

Preheat your oven to 275 degrees C.

Put pelati in kitchen blender. Add salt, sugar, oregano, basil and dry onion and blend until combined.


Divide dough in two pieces.


Lightly oil your baking pan with olive oil and sprinkle with polenta (cornmeal) for crispier crust.

Take one ball of dough and flatten it with your hands directly on the baking pan starting from the middle and working outwards. Cover with 3-4 tbsp of pizza sauce leaving edges out. Add shredded cheese, sliced sausage and shallots.


Bake for 11-13 minutes. When baked, add lamb’s lettuce and splash of olive oil.
