A few weeks ago my husband and I celebrated our 13th anniversary, so we took our kids and treated ourselves with lunch in a newly opened restaurant in Crikvenica, called Dida. Food was so incredibly delicious and beyond my expectations. Everything was so good but the thing that blew my mind were crispy ricotta rolls with olive oil and honey. I was so smitten that I couldn’t wait to recreate the recipe. So, here it is, voila!

 

Ingredients:

 

  • 250 gr ricotta cheese
  • 1 egg yolk
  • 6 sheets phyllo dough
  • About 30 gr bleached almond slices
  • Splash of olive oil
  • Honey

 

Preheat oven at 200°C.

Mix ricotta cheese and egg yolk and set aside.

Take 3 sheets of phyllo dough and place one over the other.

Cut the dough in 12 squares.

Put ricotta in a piping bag and pipe in the middle of every square.

Roll each section and put on a parchment paper placed on the baking tray.

Bake rolls for 15 minutes.

In the meantime toast almonds in a clean, non stick pan.

When the rolls are done, drizzle with olive oil, melted honey and sprinkle with almond slices.

Serve warm.

These rolls freeze well so you can make them ahead of time. Just put them directly from freezer in preheated oven and bake for 20 minutes.

This serves 24 rolls.

 

Prije nekoliko tjedana moj dragi i ja proslavili smo 13 godina braka i odlučili smo otići u novootvoreni restoran Dida u Crikvenici. Oduševila me hrana, ambijent, ljubaznost a ono što me posebno oborilo s nogu je bio desert. Hrskave rolice od skute prelivene maslinovim uljem i rastopljenim medom i posipane blanširanim feticama badema. Odlučila sam probati rekreirati recept i mogu reći da je ispao savršen. Rolice su pogodne i za zamrzavanje. Iz zamrzivača ih direktno stavite u zagrijanu pećnicu i pecite 5 minuta duže od navedenog vremena.

 

Sastojci:

 

  • 250 gr skute
  • 1 žutanjak
  • 6 kora za baklave
  • Oko 30 gr blanširanih fetica badema
  • Malo maslinovog ulja
  • Med

 

Zagrijte pećnicu na 200°C.

Pomješajte skutu sa žumanjkom i stavite sa strane.

Stavite 3 kore za baklave jednu preko druge i narežite tijesto na 12 kvadratića.

Stavite skutu u vrećicu za dekoriranje i na sredinu svakog kvadrata stavite nadjev po sredini.

Zarolajte i posložite na tepsiju prekrivenu papirom za pečenje.

Stavite peći na 15 minuta.

Za to vrijeme tostirajte bademe. Kada se rolice ispeku, prelijte ih sa malo maslinovog ulja, rastopljenim medom i pospite tostiranim bademima. Poslužite toplo.

Od ove količine sam dobila 24 rolice.
