Smoked salmon with gnocchi
Today I was up for something easy and quick, yet very fancy. Smoked salmon was excellent choice. Everything was ready in less than a hour. Recipe for gnocchi are from Coolinarika, they are made without potatoes, but you’d never guess. They are so tender and light, almost melting in your mouth. - 2,5 dcl water
- 70 gr butter or 1,5 tbsp oil
- pinch of salt
- 150 gr all purpose flour
- 1 egg (beaten)
For smoked salmon sauce:
- splash of olive oil
- 120 gr smoked salmon
- 1 garlic clove
- handful of peas
- 250 ml cooking cream
First, prepare gnocchi. Put water, butter or oil and a pinch of salt into the pot and bring it to boil. Add flour all at once and stir vigorously. Set aside to cool.
Add beaten egg and mix well.
Add some flour and mix by hand. Keep adding the flour until the dough is just slightly sticky.
Bring water to boil.
Divide dough into four pieces.
Roll each piece into a rope and slice each rope into the little rounds. Run through fork for nicer look.
Put them into the boiling water and cook just until they rise to the surface. Take them out with colander, place them in a clean pot and splash with oil to prevent sticking.
For salmon sauce heat olive oil and add pieces of smoked salmon and peas.
Stir and add finely chopped parsley, chopped garlic, salt and pepper.
Pour cooking cream and cook for 5 minutes.
Add gnocchi and stir gently.
